Chicken Potato and Cauliflower Red Curry


Chicken, Potato and Cauliflower Curry

2 Chicken Breasts, cut into bite size pieces
3 medium red potatoes, cut into bite size pieces
1/2 head Cauliflower, cut into bite size pieces
1/2-1 cup Frozen Peas
1/2 Onion, diced
3 cloves Garlic, crushed
2-4 Tbsp Red Curry Paste
1 Can Coconut Milk
Olive Oil

Cook onions and garlic in Olive Oil until soft ad transparent, Add coconut milk and curry paste to taste (2 Tbsp for mild.) Stir in Chicken, Potatoes and Cauliflower, cook on low, covered until vegetables are al dente and chicken is cooked through. Add peas for last 2-3 minutes of cooking time. Serve over rice with a good quality naan.
