Whats for dinner???

Nothing would be more tiresome than eating and drinking if God had not made them a pleasure as well as a necessity. ~Voltaire I don't normally post recipes or food pictures...mostly because I eat stuff too fast to take a picture :) but tonight I made a dish I thought I would not like at all.....and it was DELISH, (Thanks Mels!!!!) so I thought I would post it.

Crockpot Creamy Italian Chicken

3 lbs chicken pieces
1 (2/3 ounce) package Italian salad dressing mix
4 tablespoons melted butter (divided)
Salt and Pepper

1 (10 ½ ounce) can cream of chicken soup

8 ounces cream cheese (or neufchatel for a lower fat recipe)

1. Place chicken pieces in crockpot and sprinkle Italian seasoning over chicken. Top with 2 Tbsp melted butter. 2. Cook on low for 4-6 hours. 3. Add Cream of Chicken Soup and cream cheese 4. Cook on low for 45 min to an hour stirring occasionally I served over steamed white rice.

Funny story, I also steamed some frozen Edamame in the pods...Connor decided they were Magic Beans that would make him a giant. :) Loved squeezing the beans out of the pod into his mouth....nothing like fun food to keep a kid at the dinner table. :)

  1. This recipe is surprisingly delicious! Being a weight-watcher (in the truest sense of the word!) I made this dish with low-sodium soup, fat-free cream cheese and NO butter or margarine...and guess what? It was DELICIOUS! So, if anyone out there is wondering, it can be re-made and it's pretty good!
