Banana Applesauce Bran Muffins

It is always good to have some easy breakfast or snack foods around, but trying to reduce processed foods means thinking ahead, prepping ahead and freezing. These muffins are great to make and freeze individually, we pull out 3-4 at a time and let them thaw in the fridge, then grab and go on work mornings.

Banana Applesauce Bran Muffins


    1 Banana, fresh
    1/4 c Butter, softened
    1 c Applesauce, unsweetened
    1 Egg
    1/2 c Honey
    1 tsp Vanilla
    1/3 c Milk
    1/2 c Oat Bran
    1 1/2 c Whole Wheat Flour
    1/2 tsp Cinnamon, ground
    1/4 tsp Cloves, ground
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/4 c Rolled Oats
    2 Tbsp Whole Flax Seed


Prepare muffin pan, preheat oven to 475*. Mix dry ingredients, in a separate bowl mix wet ingredients. Combine wet and dry ingredients until just wet through. Fill 12 muffin cups. Bake 15-20 min
